Goat Butter Scones with Rosemary & Lemon

At this point it’s probably coming across that we love, LOVE scones. We hope that you are starting to try these recipes out and love them too. There is something so easy about making scones compared to other baked goods. Maybe it’s because rolling out scone dough is sooo much easier than rolling out pie crust. Or it could be that scones bake well in the oven and are hard to burn (unless you walk away and forget about them). What I realize and appreciate is that once you get down the basic ingredients in a scone recipe, it can be really easy to get creative and add all sorts of additions to the original foundation, trusting that it will work out.

It’s important when making scones to not over stir the butter into the flour. Having small pea size chunks of butter makes the scones flaky and light when they come out of the oven. If over mixed they can become tough.

These are one of my favorite savory scones of all time. So simple, easy and delicious! These goat butter scones are combined with rosemary and lemon to create a wonderful treat for brunch, dinner or snack time.

If you’re wondering how we thought of this recipe, here’s some insight…

For 4th of July this year we went to a new restaurant on the water. They served us the usual bread basket but instead of classic butter they offered goat’s milk butter with lemon. It was delicious. Like shockingly good. Somewhere around the same time we saw goat’s milk butter at our local Whole Foods and Mom had the genius idea to put it in a scone. Thus, our goat butter scones were born.

I love all scones equally so it’s hard to pick a favorite, but I was honestly so impressed with the flavor that they have to be in my top 3 of all time - which is saying a lot because I love scones. Let me know if my love for scones is coming on too strong. I hope you will try these out and love them like I do!

Goat Butter Scones with Rosemary and Lemon
Goat butter is a subtle and delicious taste combined with rosemary and lemon to make a unique scone. The goat butter has less lactose than cow’s milk butter while still giving that butter flavor and flaky texture. It’s a nice option and interesting change.
Ingredients
  • 3 cups flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup goat butter
  • 2 teaspoon grated lemon peel, fresh
  • 1 ½ tablespoons fresh rosemary, finely minced
  • 3/4 to 1 cup almond milk or coconut cream
  • 1 tablespoon lemon juice
Instructions
Heat oven to 400° 1. Stir the 1 tablespoon of lemon juice into the almond milk. Set aside. 2. Whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt. 3. Cut in goat butter with a pastry blender until coarse, about the size of peas. 4. Stir in the minced rosemary and lemon zest with a fork until evenly combined. 5. Fold in the almond milk until the dough just comes together. 6. Turn the dough onto a floured board. Pat out the dough to 1/2" thickness. Cut into shapes with a 2 1/2" cookie cutter or juice glass. Place on an ungreased baking sheet. 7. Bake for 14-16 minutes. Enjoy warm from the oven. Can be reheated at 350° for 5 minutes. Store in an airtight container. Notes: - Scones freeze well. Reheat in 350° oven for 5-8 minutes until warm. - Make it dairy-full: substitute dairy milk for the almond milk and stir in 1 tablespoon of lemon juice, just the same.
