5-Minute Avocado Toast with Poached Egg

When you’re craving avocado toast and an egg on a weekday, or any day, here’s a 5-minute recipe. 

Lee’s been eating avocado toast with an egg for lunch a lot lately and remembered a quick trick her mom used for cooking an egg. Her mom would use a small bowl or mug and microwave the egg. In less than a minute she had an egg done to her liking.

With a little experimenting to find the right timing for your microwave, you'll come back to this fast method for cooking eggs again and again. We also found that using a regular size mug, instead of a bowl, mimics the shape and size of a pan-poached egg.

Here's the bonus. You won’t be left with a pan to clean!

5-Minute Avocado Toast with Poached Egg
Here's a super quick version of a breakfast favorite. Just use a mug and the microwave to cook the egg, and slide it right onto the toast. No pan to clean up!
Ingredients
  • 2 slices bread
  • 1/2 avocado
  • 2 eggs
  • 2 teaspoons margarine
  • sea salt and pepper to taste
  • You'll also need: a microwave-safe mug or small bowl. Wax paper to cover.
Instructions
1. Toast bread. Slice or mash avocado, place on toast and sprinkle with sea salt.2. Melt 1 teaspoon margarine in coffee mug or small bowl, about 15-30 seconds.3. Crack 1 egg into cup. Season with salt and pepper. Cover and microwave on high for 40-60 seconds. You'll hear the egg white popping, and this is ok. Microwave ovens vary, so cooking times may be different - 5-10 seconds can mean the difference between a soft and overcooked egg. 4. Run knife along edge of egg and slide egg onto toast. Repeat with next egg. Enjoy.Notes:Cook one egg at a time or you'll have runny egg white in the middle that doesn't cook.To avoid egg white bits all over the inside of the microwave oven, be sure to cover the mug or bowl.
