The first time we discovered pureed cauliflower was at a restaurant in California. The chef had left Google to open his own restaurant serving both meat and vegan options. Instead of mashed potatoes he offered a vegan pureed cauliflower. Both of us missed being able to order mashed potatoes at restaurants since they're usually filled with cream and butter, so we decided to try it. Let's just say we scraped that serving dish clean trying to get every last bit. It was delicious.

Fast forward several years and it was suddenly trending. Recipes were popping up all over with different ways to puree cauliflower. We've decided to share with you our take on one of our favorite potato substitutes. We added a bit, well a lot, of bacon because... bacon. This is a great recipe to get both the comfort food you love and a healthy dose of veggie.

Cauliflower Puree with Bacon
Comfort food with a healthy twist, this delicious pureed cauliflower is irresistible with crumbled bacon topping. Great for dinner, as a side dish, or for brunch. Easy to make and dairy free.
Ingredients
  • 4-6 slices bacon, preferably uncured
  • 1 head cauliflower
  • 2-3 tablespoons vegan margarine
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon white pepper
Instructions
1. With clean scissors, cut the bacon into 1/2" pieces. Fry in a skillet over medium heat until crisp. Drain on paper towel and set aside. 2. Rinse the cauliflower and trim the leaves and stem. Course chop into similar size pieces – about 1 1/2" thick – so it will cook evenly. 3. Add 2-3" water to a large saucepan and then add the cauliflower. Bring to a boil. Reduce the heat. Cover and simmer, stirring occasionally, for 7-10 minutes until the cauliflower is very tender when pierced with a fork. 4. Remove from the heat and drain. Pour drained cauliflower into a food processor or blender, or keep in the pan if using an immersion blender. Place the margarine on top so it begins to melt. Let the cauliflower cool slightly and steam escape before closing process/mixer lid. Process until smooth, scraping the sides and mixing again to ensure all the pieces are pureed. Season with salt and pepper to taste. 5. Place in a serving dish and top with bacon. Enjoy! Notes: - For a larger head of cauliflower, use additional margarine. - A tablespoon or two of nondairy milk can be added if the consistency is too dry.
