2 Ingredient Watermelon Slushy

Simple Frozen Slushy for Hot Summer Days

This summer we’ve been obsessed with watermelon. Something about the freshness and juiciness has us wanting more. A couple years ago we discovered how delicious and fun it is to make a watermelon slushy in the blender. We thought we'd try it out again and add some honey to sweeten up the drink a bit.

Part of what makes this drink so refreshing is that the watermelon is frozen before blending. Who doesn't love a slushy? We stumbled upon this trick by accident. After making our watermelon ice cubes we decided to store the other half of the watermelon in the freezer for a few days until we were ready to use it for something.

We decided to make a slushy and use the frozen watermelon we already had. Usually we use fresh watermelon. We were glad we tried it out because the drink came out cold and thick.

2 Ingredient Watermelon Slushy
Try this low sugar, frozen drink made with watermelon and a hint of honey. Delicious, cooling and so easy to make. Kick back and enjoy!
Ingredients
  • 1/2 medium seedless watermelon
  • 1 tablespoon honey, or more to taste
  • 2 tablespoons water, optional, as needed
Instructions
1. Cut the watermelon in half and remove the rind. Cut into medium chunks and place them in a plastic bag along with any juice. Freeze flat, trying to keep the pieces somewhat separated so that it will be easier to work with later. 2. Let freeze 4 or more hours. The watermelon doesn’t have to be quite fully frozen. 3. Place half of the frozen watermelon in a food processor or blender. Add honey. Add 1-2 tablespoons water, depending on how frozen the watermelon pieces are. (Water is needed if hard-frozen.) 4. Blend until smooth. Pour 1 cup servings into glasses. Repeat with the remaining watermelon. Notes: - For a fun twist, add crushed mint or lime juice to the watermelon before blending. - Depending on the sweetness of the watermelon, you can add more honey if desired.
