Here’s a keeper for an amazing and easy holiday side dish recipe.

Rebel claims that I start thinking about Thanksgiving recipe ideas around, say, July. As she joked with me a couple of summers ago about this, I said she exaggerated. Once she’d pointed it out, I noticed, ok sure, some years it happens. Actually, maybe every year. 

We like to laugh about it. I’m happy to be more aware of this little habit and try to hold off a bit on all that idea gathering. I also just embrace my love of brainstorming, feast planning, and anticipating the fun of a big gathering.

Anyway, it’s now October and the holidays are coming! We’re excited to share this roasted green bean recipe for your party planning to keep on hand as a simple and delicious side dish for a crowd. 

Fresh and easy roasted green beans are great for a crowd. Try this for Thanksgiving, Christmas or the holidays. Your guests will love the lemon flavor. Vegan, gluten free.

For our family and friends, we don’t stick with the same menus for Thanksgiving, Hanukkah and Christmas year after year. We do have favorites and certain traditional dishes we make, but we love trying new recipes too.

Thanksgiving is one of my favorite family gatherings to plan because of all the pies. And because there are so many side dishes. Loads of new ideas to try in both of these categories.

When it is time to get serious about the planning, I haul out a bunch of old magazines, a couple of new ones, a stack of printouts of online and other saved recipes, and possibly a cookbook or two. I’ve got my mom’s handwritten pumpkin pie recipe and a couple of others scribbled on notepaper or actual recipe cards. And then I’m Alice down the rabbit hole.

With so many appealing recipes out there, I’ve learned the hard way that side dishes are the fun and also the challenge of Thanksgiving – and don’t get me started on complicated appetizers that can derail my Thanksgiving day schedule. Of course, friends and family contribute to the feast, but for the dishes I cook to go along with the turkey, the recipes need to be easy to make ahead and simple to do.

I discovered roasted vegetables a few years ago. They can be prepped the night before, roasted in advance to set aside for an hour or so, and then quickly reheated before the meal.

Our whole clan seems to love the amazing flavor of roasted vegetables. With a few simple steps, we serve up delicious brussels sprouts, carrots or green beans.

These lemony green beans add beautiful presentation and color to your table and the taste compliments just about any Thanksgiving or holiday meal.

ingredients:

  • 2 lbs fresh green beans
  • 2 tablespoons olive oil
  • fresh lemon zest from 2 lemons
  • fresh lemon juice from 2 lemons
  • sea salt

instructions:

How to cook Simple Lemony Roasted Green Beans

  1. Preheat oven to 400°. Place oven rack in the middle.
  2. Wash and trim green beans.
  3. Wash and dry lemons. Zest both lemons, then juice.
  4. Line  baking sheet with foil or silpat mat (optional). Place green beans on the baking sheet.
  5. Pour olive oil on green beans and mix. Then drizzle with lemon juice and sprinkle with lemon zest.
  6. Roast in oven for 20 to 25 minutes.
  7. Sprinkle with sea salt to taste.
